Almond Butter Baked Tofu

In the spirit of creativity in the kitchen, I came up with a new tofu recipe that I had for dinner last night and lunch today, and it is delicious!

Ingredients:

  • 1 block extra-firm tofu, pressed (8 points for Nasoya brand)
  • 1 tbsp almond butter (2 pts)
  • 2 tbsp soy sauce
  • 1 tsp minced ginger (fresh if you have it but I used jarred)
  • 2 cloves garlic, minced

Directions:

  • Add almond butter, soy sauce, ginger, and garlic to a bowl.

Marinade

  • Microwave for 30 seconds and stir to combine
  • Cut tofu into desired size – I made mine into 16 small strips with 4 strips = 2 points
  • Marinate tofu in sauce for ~ 1 hour or however long you can hold off

  • Bake tofu for 30 minutes at 375º, turning once

The entire recipe is 10 points, so if you have half it is 5 points, or you can divide it up however you like. I had 1/3 of the tofu (3.5 points) so I made a .5 point sauce to add some extra flavor.

The sauce:

  • 1 tsp almond butter (.5 pts)
  • 1 tbsp soy sauce
  • 1 tbsp water
  • 1/2 tsp ginger

All microwaved together and doused over the tofu.

I ate the tofu with boiled green beans (0 pts) and 2/3 cup whole wheat couscous that was leftover from Sunday (2 pts), so 6 points total for the dinner.

For lunch today, I had more tofu without the sauce with leftover green beans with some apple cider vinegar for flavor.

I also had 1/4 large cantaloupe for “dessert” (1 pt) which was SO juicy and delicious.

This tofu is awesome and very similar to last week’s baked tofu recipe, but has almond butter instead of honey in the marinade. You could easily make this with peanut butter instead but having the nut butter in the sauce gives such a nice crust on the tofu and its just delish!

  1. Wow, Beth that looks delicious. I’m not a huge fan of tofu, but that marinade of the soy sauce, peanut butter, ginger and almond butter sounds so good.

    Also, I’m sorry to hear about the creepy guy at your gym. That really blows, but it sounds like you handled the situation as well as you possibly could.

    • I’m sure you could use the same marinade with chicken, pork, or steak or any meat really and it would be delicious. It’s quite similar to a peanut sauce so anything that a peanut sauce would work well on (including pasta!) could work for the marinade!

  3. I made a really awesome chicken croquette recipe last week. It was from the WW Now & Later recipe book. They were so delicious & filling!

    • Chicken croquettes were one of my absolute favorite dishes at a spanish tapas restaurant before I gave up meat! I’ll have to find a veggie or fish version… they are SO good!

  4. I’ve been making some kick ass quinoa bowls with a curried quinoa topped with black beans, kale pesto, hummus, and avocado–diviiinne 🙂 And that tofu looks delish!

  7. i love how u think out of the box! adding almond butter instead of peanut butter which is sometimes done- very yummy switching it up, bet the marinaded tofu was crazy nummy!!

  10. Tofu usually doesn’t sound too tasty to me, but that recipe sounds good! My mom recently made this chicken dish and triffle dessert for me and it was delicious!

  14. I know you said that it would work on any meat, but do you think it would taste good with tilapia? I’m new to cooking fish and don’t know if peanut butter + fish would be an awful taste…

    • Hmmmm I’m not sure how almond butter + tilapia would work.. I probably wouldn’t do it. I might try combining garlic, parmesan, panko, and parsley, drying the fish with a paper towel, placing it in egg wash, then in the breadcrumb mixture, then pan searing it.
