Whew this weekend was a busy one! After my 8k on Saturday morning, we got on the road to visit Wil’s mom for the night and had a really nice time. We went to Joe’s Crab Shack for dinner which was pretty hysterical – the entire wait staff broke into dancing during the middle of the dinner rush. Apparently that’s just part of the whole scene of going there, and I found it quite entertaining. After spending the night and then brunch in the morning, we got on the road back to DC and made it home around 5. Wil’s company party was also last night (a little delayed for a holiday party, no?) so we were go-go-go and barely stopped to take a breath the whole weekend! It was fun to go out last night and put on some lipstick, though staying out until 1am on a Sunday might not be the best way to start the week.
Moving along, we did stop at Kroger’s yesterday morning to grab some stuff for brunch, and I couldn’t get over how cheap some of the produce was! You know me – I had to pick some up for the week when I spotted 99 cent organic apples. I only spent $14.99 and got a pretty good amount:
- 2 white onions
- 2 bags black beans
- 6 organic gala apples (99 cents/lb!!)
- large zucchini
- english cucumber ($1!)
- red grapes ($1.29/lb)
- cherry tomatoes ($2)
- Cilantro (59 cents!)
Where is the other bag of black beans?
I’ve been trying to figure out one dish I can make per week that serves really well as leftovers, and I’ve been craving these black beans because I hadn’t made them in a long time. While trying to figure out how I could possibly soak them and still do everything I had to do this weekend, I came up with a solution.
I brought this large tupperware with me, so I put the black beans in there with some water and soaked them while making brunch and driving home. When we got home, the beans were soaked and ready to cook!
A little crazy? Maybe. But I wanted black beans, and now I have ‘em.
Since it’s a pretty length process to cook them (2 hours in total), I ended up putting them on to cook for the first hour and then running back out to the store to grab the last few things I needed from The Teet before getting ready for the party.

- Fresh Salsa
- Salad Greens
- 2 Large Mangos
- 2 tubs low-fat cottage cheese (BOGO free)
- Cooking Spray
- Roasted Almonds
- Crumbled Feta
- Whole Wheat English Muffins (BOGO free)
Cheesecloth! I’m planning to use it to squeeze out the zucchini, and also know it’ll be useful any time I use frozen spinach.
At The Teet, I spent 32.99, plus the 14.99 at Kroger = $47.98. Way under budget!

I’m excited because the black beans are so delicious and SO versatile. I have a lot going on after work this week, so they’ll also come in handy for some easy dinners.
