• Welcome to Beth’s Journey!

Hey! I'm Beth - a 27 year old foodie living and working in the Washington, DC area who has lost almost 90 pounds through Weight Watchers. I love good food, wine and getting creative in the kitchen, and then balancing that out with running, The Shred, and yoga. Please feel free to browse around and hopefully you'll find some ideas, recipes and motivation!

  1. Thought you might relate to this story. I was just doing some stretching at my desk and raised my arms high over my head. As I did I felt my pants slip and they fell down to my ankles. Guess I’ll have to retire these pants. 60 pounds does make a difference.

  2. Beth,

Wow- I saw your post on Eatliverun and your website and decided to check it out. I would so love to start reading your blog because I too struggle with my weight up & down. I am currently up and depressed about it. Look forward to catching up on your blog!

  3. Hello!

I LOVE your blog. I’m getting so many great salad/food ideas, thank you! Do you mind if I put your link on my blog?

    Thanks!

  4. Hi Beth!
This is Jess Hine (formerly Santopietro), we went to high school together…I ran across your blog awhile ago, and I love to read it…anyway, I just wanted to let you know I tried your “banana softserve” last night, I had it with my husband and his sister, and we used four bananas and about a half pint of frozen strawberries (that were fresh, but we froze them), and followed your instructions…It was absolutely amazing! I can’t wait to try it with other banana/fruit combos.
Your story is incredibly inspiring, and I think it is amazing what you have done! Congrats on being healthy and happy!

    • Hi Jess! of course I remember you. I really appreciate your kind words and thanks so much for stopping by! So glad you enjoyed the banana softserve – crazy how simple the ingredient list is, isn’t it!?

  5. after looking at some of the dishes, i’m getting hungry.

  6. Hi Beth – I came across your site one day because one of your posts mentioned a restuarant I work with and now I follow your blog religiously! I looove all of your recipes and fitness tips and especially how you include the Weight Watchers points! I recently signed up for WW and am an avid gym-goer myself and I always look forward to reading your posts! Thanks for the great content 🙂

  7. Hi Beth, it was nice to meet you at the Pacers Ambassador kickoff meeting. Your blog is awesome! I can’t wait to share it with my friends. See you at the races!

    • Hey Harold – So glad you found my blog! It was great talking with you at the event and I will definitely be seeing you around the races! I can’t wait to hear all about your marathon training.. hopefully outside instead of the treadmill! 🙂

  8. Beth –

You met my husband tonight at the Pacers Ambassador meeting. He is the one married to the girl from Woodbury and yes we do the luminaries each year. I am very inspired by your story. I have struggled with my weight my whole life. I am a member of WW and cannot seem to make it stick. I am looking forward to reading your blog and even looking to you for inspiration and support. Congrats on being an Ambassador.

  9. Hi Beth;

I am a health promoter in Canada and work in the exercise psychology field. I teach weight management courses and speak about healthy eating. I just wanted to let you know that since I have found your blog, I have tried many (and will try all) of your fabulous recipes. I have forwarded your blog onto all I work with and my clientelle. Those people who dont cook, but want to learn can really benefit from your food experiments.

I also appreciate your healthy approach to weight loss as you could have chosen so many other ways to go. Just be careful you don’t fall into the trap others do….it never becomes enough. The feeling of ‘just five more pounds” can get the better of you. Not that you are…I’m just sayin’…it happens a lot!

You look stunning in your pictures and appear to be a very outgoing, vivacious, and charismatic individual. Thanks for promoting health and the enjoyment of eating! You are a great role model for health.

    Sincerely,
    Kathi Cameron

  10. Hey Beth,

I just wanted to extend a sincere thank you for the time and effort you put into your blog. I’ve been a reader for 6+ months and lately I have been trying several recipes that you have posted and LOVED them. I am grateful to have your journey and inspiration as apart of my life.
It’s taken me a year to lose 35 pounds and I’ve been at a stand still gaining and losing the same 5-7 pounds over and over again. I keep coming back to your blog to pick myself up– seeing your success is beyond inspirational. Again, much thanks.

  13. Hey Beth I just noticed a little happy face on the far right side of your blog. Another blog I follow, Peanutbutterfingers (www.pbfingers.com) has the same thing… wonder if you both have the same web designer? I never noticed it on yours till tonight!
Btw, keep on blogging… I look forward to your posts! Pickynikki
