Healthy Living Summit – THE FOOD!

There was absolutely NO shortage of food whatsoever at the Healthy Living Summit! It’s funny because whenever I travel to conferences for my job, I am always concerned about how far apart the meals are. Breakfast at 6am and then lunch at 1pm with no snack in between does not work for me – but alas, everyone at HLS was in the same boat and likes to eat frequently so we were all on the same page.

Here was the food schedule for Saturday:

– Breakfast sponsored by Thomas, Quaker, and Stonyfield – 8:00am -9:00am

– Snack Break sponsored by Quaker – 10:55am – 11:40am

– Lunch sponsored by Arnold and Oroweat – 12:30 – 1:30

– Snack Break sponsored by Athenos – 3:10 – 3:55

Crazy right!? Crazy good… 🙂

All the spreads were full of delicious food with tons of vegetarian options, so I was one happy camper. Breakfast on Saturday had a huge oatmeal bar:

With hot and instant oatmeal, and tons of toppings. There was also a ton of Stonyfield yogurt:

And then bagel thins, muffins, and fruit.

Plus bags of Adora chocolate calcium supplements – one for every conference attendee!

I made a big bowl of oats with a side of fruit for myself:

I put some brown sugar and granola on my oats, and then strawberries, blueberries and raspberries on the side. I loooove berries and these were fresh and delicious.

Not even 2 hours later, the Quaker break was ready for action:

I had a pear and a granola bar, just because it was there…

Then came the highlight for me – LUNCH sponsored by Arnold and Oroweat! I didn’t get as good of pictures as I would have liked because bloggers like food and there were lots of us crowding the long tables of food, but it was amazing.

On the menu was sandwich thins and other Arnold bread, salad, chickpea salad, quinoa and edamame salad (my favorite!), cold cuts, roasted veggies and a bunch more I’m sure I’m forgetting. My only complaint was that the plates were too small so I had to pile the food up high rather than spread it out.. HAD to! 🙂

And after I ate the top layer off:

SO amazing. I have to try to recreate that quinoa salad. It tasted like it had a peanut sauce through it and it was just so delicious and surprisingly flavorful.

Then, as if that weren’t enough for the past 7 hours, we had another break sponsored by Athenos. They had tons of cute appetizers made with their feta and hummus, and here were a few of my favorites:

Cucumber cups with curry hummus and a raisin on top. I had one of those and it was SO good.

Watermelon, feta, and basil SKEWERS. SOOOOO good and creative, in my opinion. They’re also so easy to make but would please so many people because they’re so tasty. I had several of those, plus some pita and hummus:

Delish.

After that was the foodie tour, which deserves its own post – but believe me there was enough food for all.

Sunday morning’s breakfast was also a major highlight because I got such an exciting idea… Make your own cream cheese! This breakfast was sponsored by Thomas:

And then had a ton of mix-ins for your cream cheese and you could have htem make whatever creation your little heart desired.

There was everything from berries, pineapple, honey, walnuts and almonds, to sea salt, scallions, salmon, red onions, carrots, and cucumbers. I went with the savory theme and had them mix in smoked salmon, red onions, capers, scallions, and a little sea salt.

They also had a buffet with lots of fruit and bagel thins:

So I had a bunch of fruit with a toasted bagel thin and my cream cheese!

The cream cheese was UNREAL. Such a simple but amazing idea to mix whatever you want into your own cream cheese!

I went back and got another half of a bagel thin as to not let any of my creation go to waste. I’m environmentally conscious like that.. 🙂

Oh man everything was SO good. I do feel full though looking back over this recap…

If you could make your own cream cheese mixture with anything you could dream up, what would you put in there?!

  1. Holy Moley! That’s a lotta food!! It all looks delicious too.

    With regard to the cream cheese, it would all depend on my mood for the day. Am I in a sweet mood? Savory? Plain jane? It changes daily, believe me!

  2. Lunch was killer for sure. And the cream cheese bar is something I would imagine would be in heaven as well… mmmmm….

  3. I love the idea of a cream cheese bar and if I ever host a brunch I’m totally going to break that tip out! it would be so much fun =)

  4. Those photos were so mouth-watering! Fruit overload, in such a positive, beautiful way. I already talked to my hubby about going to one of these events next year 🙂 I hope HLS is annual! & the mix-in-whatever-you-desire cream cheese is so amazing! Who thinks of these things? Insane!

Olives, scallions, salt, maybe a little bacon (gasp!)– I used to get scallion and bacon cream cheese on a salt bagel in law school- you know, back in the day when I could eat anything and not look it! I had almost forgotten about those till this minute! That bagel bar looked killer. Mix your own cream cheese would be a cute idea for a winter brunch. How hard physically was it for them to stir in the mix ins?

  7. i still can’t get over the make your own cream cheese bar! so fun! ha. i would put tonsssss of veggies. i’m not a fan of the sweeter cc (too sweet) but then again i have never made cream cheese to suit my tastebuds!

    please try to recreate the cucumber cups w/ hummus. i would LOVE to see those again 🙂
